ACQUA DI GIUGNO ROVINA TUTTO, ACQUA DI AGOSTO OLIO E MOSTO

In Puglia there is this saying (translated sounds like ”June water spoils everything, August water, oil and must) and we, sensible, believe a lot in popular wisdom. In November, the fruits of that August water begin to be seen. The wine is in its first phase of processing: the harvest is by now finished along the entire boot (as we call Italy – a.n.) and in the cellars, the seething of the vats is in full swing.

The olives, on the other hand, are in full selection phase: cultivars and latitudes are in fact harvested between the end of October and the days before Christmas. With olives, then, time is running out: the small fragrant drupes must be pressed within 2-3 hours of harvesting.

VINEYARDS AND OLIVE GROVES

Have you ever noticed that there often seems to be a link between these two products, an affinity that binds the entire crop of a producer? To better understand why wine and oil seem so often connected, we asked for an explanation to those who have dedicated their life and passion to these two crops.

As often happens when it comes to good products, territory is the answer! We have crossed Italy and the response has always been that it is the land that determines the harvest. Producers, by tradition, have carried out two synergistic crops, vine and olive, which have always characterized their landscapes.

Terroir and the memory of past generations are the motivation that pushes many winemakers to maintain the cultivation of olives as well. And these two wonderful productions can be tasted, discovered, and experienced in this autumn period, with fog veiling the hills with charm. We want to tell you some adventure that you may experience with producers who have chosen to combine the nectar of the saints and oil.
