This is where the Taste Test comes into play: an essential tool for exploring and understanding individual sensory preferences and perceptions.
But let’s start with the basics, the definition.
What is the Taste Test?
The Taste Test is a proprietary scientific methodology based on a maximum of ten questions, aimed at understanding people’s sensory preferences in different food categories.
This analysis allows us to examine individual taste preferences, formulating a user profile that reflects which sensory variables they prefer most and the intensity level of each.
It is a crucial part of research in the food and hospitality sectors to better understand consumers.
Traditional Methods and Approaches in Sensory Science
Traditionally, sensory analyses to study consumer preferences use commonly known methods such as affective methods, particularly the hedonic scale. This type of analysis requires consumers participating in the study to provide a rating of how much they like a product.
However, this methodology has its limitations, primarily related to the small number of participants in the study: at least a hundred individuals should be involved, but they do not represent the entire population and can only provide an indication of preference/acceptability. Another major limitation of this method is that it can only be conducted on products already developed by companies, which must first carry out extensive research to create a new food product without knowing if it will actually meet consumer approval.

Based on studies in Neurogastronomy, it has been validated through more than 500 tasting sessions, nearly 2 million people, and gastronomic, sensory, and neuroscientific research carried out in collaboration with universities and leading research centers. Its predictive capability is refined by artificial intelligence, and the accuracy of the results reaches approximately 80%.
