Thanks to their millennia-long history, the wide variety of <strong>teas<\/strong> produced, and their fascinating <strong>ceremonial rituals<\/strong>, these two <strong>Asian countries<\/strong> attract the interest and curiosity of <strong>tea experts<\/strong>, <strong>enthusiasts<\/strong>, and newcomers alike. However, few people know that in the <strong>Far East<\/strong>, <strong>Korea<\/strong> also plays a crucial role in producing <strong>premium<\/strong>, high-quality <strong>tea<\/strong>.<\/p>\n<p>The <strong>tea culture<\/strong> in <strong>Korea<\/strong> has a long and rich history and has been an important part of daily life since ancient times.<\/p>\n<p>According to a legend, <strong>tea<\/strong> arrived in <strong>Korea<\/strong> in the 2nd century AD through a marriage: that of an <strong>Indian princess<\/strong> and <strong>King Suro<\/strong>. However, there are no concrete sources detailing what the <strong>tea<\/strong> brought as a dowry by the princess was like.<\/p>\n<p>Other more recent and reliable accounts suggest that <strong>tea<\/strong> was introduced to <strong>Korea<\/strong> around the <strong>6th-7th century<\/strong>, thanks to the contact between <strong>Buddhist monks<\/strong> and <strong>China<\/strong>. The monks, returning home after years of study, brought with them <strong>tea<\/strong> and the art of preparing it during state ceremonies or to accompany meditation. In the year 828 AD, during the <strong>Tang Dynasty<\/strong> of <strong>China<\/strong>, Korean <strong>King Heundok<\/strong> was gifted <strong>Camellia Sinensis<\/strong> seeds. These were later planted in the <strong>Hadong region<\/strong> along the slopes of the <strong>Jirisan mountain range<\/strong>.<\/p>\n<p>Religious, commercial, and cultural exchanges between <strong>China<\/strong> and <strong>Korea<\/strong> became increasingly frequent during the subsequent dynasty. Some monks returned to civilian life, while others sought refuge in remote <strong>mountain temples<\/strong> to secretly continue passing on their <strong>traditions<\/strong>, including that of <strong>tea<\/strong>.<\/p>\n<p>Furthermore, the <strong>Japanese invasion<\/strong> (1592-1597) caused further devastation and upheaval, and <strong>tea<\/strong> disappeared from <strong>Korean life<\/strong>. Once again, <strong>Buddhist monks<\/strong> and a small <strong>intellectual elite<\/strong> were the guardians of this ancient culture, hidden like a small secret to protect.<\/p>\n<p>Only with <strong>Korea&#8217;s independence<\/strong> in 1945 did the patriot, <strong>Buddhist monk<\/strong>, and scholar <strong>Venerable Hyodang Choi Beom-sul<\/strong> plant new <strong>tea plants<\/strong> and teach the practice across the country, introducing <strong>Panyaro<\/strong>, a new style of <strong>Zen ceremony<\/strong>. Today, the <strong>Panyaro Institute<\/strong> continues to teach the <strong>Way of Tea<\/strong> through naturalness and simplicity. The best, those harvested before <strong>April 20<\/strong>, are called <strong>Woojeon<\/strong>, and their tender buds offer <strong>sweet<\/strong> and delicate <strong>vegetal notes<\/strong> in the cup, a rich <strong>umami<\/strong>, and a <strong>velvety<\/strong>, almost <strong>buttery liquor<\/strong>.<\/p>\n<p>The second harvest, known as <strong>Sejak<\/strong>, is made with slightly larger buds and tender leaves selected by hand between <strong>April 20 and May 5<\/strong>. Its liquor, <strong>green-gold<\/strong> in color, is slightly more intense, with a <strong>complex taste<\/strong> reminiscent of <strong>dried fruits<\/strong> and delicate <strong>citrus notes<\/strong>. Following this, after <strong>May 20<\/strong>, comes <strong>Jungjak<\/strong>, and lastly, <strong>Daejak<\/strong>, the fourth harvest obtained from the more <strong>mature<\/strong> and <strong>tough leaves<\/strong> of late summer.<\/p>\n<p>The most common technique for producing Korean <strong>green teas<\/strong> involves a light <strong>steaming process<\/strong>, followed by <strong>pan frying<\/strong> in large <strong>woks<\/strong>. This is followed by <strong>rolling<\/strong> and final <strong>drying<\/strong>. Each offers <strong>unique botanical varieties<\/strong> and processing techniques that contribute to the <strong>diversity of the harvests<\/strong>. Korean tea is predominantly <strong>green<\/strong>, but some producers also work with <strong>oxidized black teas<\/strong> (<strong>Balyo-cha<\/strong>, which are a must-try for their warm chocolate, vanilla, honey, and fruity notes), <strong>partially oxidized teas<\/strong> (<strong>Hwang-cha<\/strong>, with warm roasted notes), and <strong>fermented and pressed teas<\/strong> (with typical smoky and licorice hints).<\/p>\n<p><strong>Hadong<\/strong> is the oldest terroir, and here, as in other cultivated areas in the south of the country, there are still <strong>ancient and wild Camellia Sinensis plants<\/strong>. I&#8217;ve been there three times since 2013, and on each occasion, I took hundreds of photos! The first &#8220;<strong>wow<\/strong>&#8221; moment to capture comes as soon as you reach the base of the plantation and look upward. Then, more follow as you look around.<\/p>\n<p>A good time to plan a visit is during the <strong>Boseong Green Tea Festival<\/strong>, with stands displaying and selling tea, <strong>guided tours<\/strong> of the plantations, numerous opportunities to participate in <strong>traditional ceremonies<\/strong>, or taste <strong>green tea-based snacks<\/strong> and <strong>ice cream<\/strong>.<\/p>\n<p><strong>Jeju Island<\/strong>, located off the southwest coast, is known for its unique <strong>climatic and geographical conditions<\/strong>, ideal for cultivating <strong>Camellia Sinensis<\/strong>.<\/p>\n<p>Called the &#8220;<strong>Island of the Gods<\/strong>&#8221; by the local population, it formed about <strong>2 million years ago<\/strong> when a submarine volcano erupted.<\/p>\n<p>In 2007, with its iconic <strong>lava tubes<\/strong>, it was recognized as a <strong>UNESCO World Heritage Site<\/strong>, becoming a highly sought-after tourist destination for the beauty of its <strong>ecosystem<\/strong>. The island is home to over <strong>2,000 plant species<\/strong>, and this complexity contributes to the <strong>diverse aromas and flavors<\/strong> of its finest teas.<\/p>\n<p>Many visitors have the opportunity to tour the plantations, participate in <strong>tastings<\/strong>, and deepen their knowledge of tea production through <strong>educational activities<\/strong>.
