Just a reliable (<\/span><i><span style=\"font-weight: 400;\">and historic<\/span><\/i><span style=\"font-weight: 400;\">) ally in the kitchen&#8230; but one that\u2019s not traditionally ours! However, if we draw a simple parallel with the fermented product that, more than any other, represents Italy (aka wine), no one would bat an eye. <\/span><b>Wine<\/b><span style=\"font-weight: 400;\">, not only in the glass, appears regularly in our grandmother\u2019s recipes, from <\/span><b>Risotto al Franciacorta, to the more homey and familiar <\/b><b><i>Brasato Piemontese<\/i><\/b><b>, and of course the timeless sauteed mussels<\/b><span style=\"font-weight: 400;\">. Great, now zoom out (<\/span><i><span style=\"font-weight: 400;\">like when you bring your thumb and index finger together on Google Maps<\/span><\/i><span style=\"font-weight: 400;\">) and, for just a moment, feel your <\/span><i><span style=\"font-weight: 400;\">European-ness<\/span><\/i><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><b>There\u2019s a whole world out there which, not having wine, for centuries cooked with&#8230; beer! <\/b><span style=\"font-weight: 400;\">The most difficult thing is <\/span><b>choosing the right one <\/b><span style=\"font-weight: 400;\">to exalt your recipes and dishes. So indulge your fantasy of being a small, misunderstood 3-star Michelin chef.\u00a0 There\u2019s just one thing to be careful about: hops. Unless you happen to be a Jew during Passover, and want to create a <\/span><i><span style=\"font-weight: 400;\">m\u0101r\u00f4r-effect <\/span><\/i><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">a bitter-herb effect<\/span><\/i><span style=\"font-weight: 400;\">), or an intransigent secessionist from Treviso, <\/span><b>beer\u2019s bitterness tends to become stronger when you cook with it<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">So feel free to use <\/span><b>sweeter and more balanced beers<\/b><span style=\"font-weight: 400;\">. And don\u2019t think of it as a Plan B. It\u2019s every bit as valid as wine, just&#8230; different. Here are <\/span><b>10 recipes with which to introduce beer in the kitchen<\/b><span style=\"font-weight: 400;\">, all of them sure to impress your friends and family. (<\/span><i><span style=\"font-weight: 400;\">Step aside plebeians!<\/span><\/i><span style=\"font-weight: 400;\">)<\/span><\/p>\n<h2><b>1. CARBONADE FIAMMINGA<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">When you imagine a culinary paradise, Belgium isn\u2019t exactly the destination that comes to mind. <\/span><i><span style=\"font-weight: 400;\">Speculoos<\/span><\/i><span style=\"font-weight: 400;\">, waffles, chocolate, mussels and French fries. Despite a <\/span><b>more than enviable landscape of beers<\/b><span style=\"font-weight: 400;\">, the (<\/span><i><span style=\"font-weight: 400;\">peasant<\/span><\/i><span style=\"font-weight: 400;\">) food is hearty and simple, but lacks creativity and variety. One of the few exceptions is the <\/span><b><i>Carbonade<\/i><\/b> <b><i>Fiamminga<\/i><\/b><i><span style=\"font-weight: 400;\">.<\/span><\/i><span style=\"font-weight: 400;\"> This dish is a variation of Italian (<\/span><i><span style=\"font-weight: 400;\">previously mentioned<\/span><\/i><span style=\"font-weight: 400;\">)<\/span><span style=\"font-weight: 400;\"> braised beef, in which the <\/span><b>meat soaks happily in a sweet, well-structured, and complex Belgian beer<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The whole thing dressed abundantly with onions, smoked bacon, thyme, bay leaves, mustard, and pepper. It\u2019s a dish that, outside of Belgium (recognized as the undisputed capital of this delicacy), <\/span><b>we find, with some variations, throughout Central Europe<\/b><span style=\"font-weight: 400;\">. As soon as we leave the <\/span><i><span style=\"font-weight: 400;\">wine-belt<\/span><\/i><span style=\"font-weight: 400;\"> we start seeing <\/span><i><span style=\"font-weight: 400;\">Carbonades<\/span><\/i><span style=\"font-weight: 400;\">&#8230; and beer! By cultural osmosis, we even find this word in <\/span><b>Val d\u2019Aosta<\/b><span style=\"font-weight: 400;\">, an Italian region with a decidedly northern European identity, where it\u2019s used for the more or less <\/span><b>classic beef braised in wine<\/b><span style=\"font-weight: 400;\">. Any medium to full bodied <\/span><b>Belgian-style beer <\/b><span style=\"font-weight: 400;\">is right for this dish, like a <\/span><i><span style=\"font-weight: 400;\">Dubbel, Tripel, Abbey, <\/span><\/i><a href=\"https:\/\/www.vinhood.com\/magazine\/esperienze\/buon-compleanno-birre-trappiste\/\" target=\"_blank\" rel=\"noopener\"><i><span style=\"font-weight: 400;\">Trappist<\/span><\/i><\/a><span style=\"font-weight: 400;\">, or <\/span><i><span style=\"font-weight: 400;\">Strong Belgian Ale<\/span><\/i><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">P.S. The same holds true for the iconic <\/span><a href=\"https:\/\/www.vinhood.com\/magazine\/esperienze\/dopo-due-anni-torna-loktoberfest-e-festeggia-i-150-anni-della-birra-marzen\/\" target=\"_blank\" rel=\"noopener\"><i><span style=\"font-weight: 400;\">Schweinshaxe in Bier<\/span><\/i><\/a> <span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">it\u2019s not a tongue twister, but rather a shank cooked in Bavarian beer<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<h2><b>2. MARINADES<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Beer makes an incredible <\/span><b>marinade for meat<\/b><span style=\"font-weight: 400;\">. From the most delicate <\/span><b>white meats, like chicken and turkey, all the way to pork ribs and belly<\/b><span style=\"font-weight: 400;\">, you can leave your favorite meat to soak in it with the spices you prefer, as well as a pinch of salt and pepper. I also recommend adding some citrus juice, like <\/span><b>lime, orange, or lemon<\/b><span style=\"font-weight: 400;\">. After having left it to marinate, sealed and covered, for <\/span><b>at least 6 hours<\/b><span style=\"font-weight: 400;\">, your meat is ready to be grilled or browned in the pan.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">You can also make small cuts in the meat to allow the juices to penetrate better. So easy, but with that extra little touch. Oh, and the golden rule <\/span><b>applies to fish as well! Sword fish, cod, salmon, or shrimp<\/b><span style=\"font-weight: 400;\"> are excellent marinated in beer! Feel free to use <\/span><b>very light and delicate beers<\/b><span style=\"font-weight: 400;\">, like Helles, Lager, Weizen, or Bi\u00e8re Blanche, but you can also experiment with citrus and exotic beers like NEIPA. BEER CAN CHICKEN<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">A modern and <\/span><i><span style=\"font-weight: 400;\">Made in the USA<\/span><\/i><span style=\"font-weight: 400;\"> version of one of the first dishes that became a hit during the <\/span><i><span style=\"font-weight: 400;\">fabulous 80s\/90s <\/span><\/i><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">alongside penne alla vodka and shrimp cocktail<\/span><\/i><span style=\"font-weight: 400;\">), threatening, for a short time, Italy\u2019s culinary sovereignty: <\/span><b>Beer Can Chicken<\/b><span style=\"font-weight: 400;\">. Unlike the original, this modern variation is <\/span><b>as fun as it is vulgar<\/b><span style=\"font-weight: 400;\">, given that the beer, as can be deduced from the name, is used in its entirety, <\/span><b>including the can<\/b><span style=\"font-weight: 400;\">! The not-sugar-coated name of this red, white, and blue dish is even more suggestive (Warning:<\/span><i><span style=\"font-weight: 400;\"> not for the easily scandalized<\/span><\/i><span style=\"font-weight: 400;\">): <\/span><i><span style=\"font-weight: 400;\">Beer Butt Chicken.<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">Yes, you read that right, it\u2019s not a typo. I imagine that you\u2019ve already reached the unmistakable conclusion of where the can, after having been washed and popped open, gets inserted&#8230; It\u2019s unclear whether the bird is consensual or not. Anyway&#8230; the chicken can first be marinated, or massaged with brown sugar and spices (<\/span><i><span style=\"font-weight: 400;\">tex mex or cajun style<\/span><\/i><span style=\"font-weight: 400;\">). After having given it a good rub down and having&#8230; positioned&#8230; the can in the&#8230; (<\/span><i><span style=\"font-weight: 400;\">the line between \u201cfood porn\u201d and \u201cYouPorn\u201d grows ever thinner<\/span><\/i><span style=\"font-weight: 400;\">), the chicken will remain upright, as though sitting on it. When cooking, this <\/span><b>allows the beer to evaporate inside, keeping the meat moist and juicy <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">and not tough and stringy<\/span><\/i><span style=\"font-weight: 400;\">) and the skin crispy, while also emitting a delicious fragrance. In terms of beer, you can try everything, <\/span><b>even bitter beers <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">the exception that proves the rule<\/span><\/i><span style=\"font-weight: 400;\">), as long as the aromas complement the spices being used.<\/span><\/p>\n<h2><b>4. RISOTTO<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">If you have some experience in the kitchen, after having allowed the rice to toast, then you too usually leave it to <\/span><b>simmer for a moment in white wine<\/b><span style=\"font-weight: 400;\">, or occasionally red wine. Well, <\/span><b>beer can be used in exactly the same way<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">You can then decide whether to leave it like that, perhaps with a pinch of aromatic herbs like parsley, dill, or scallion, or go further and add any other ingredient you like, from sausage to speck for a heartier dish. When it comes to beer you have plenty of room to maneuver, as long as it\u2019s <\/span><b>not at all bitter<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<h2><b>5. BATTER<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Cholesterol, saturated fats, and love handles aside&#8230; raise your hand if you love fried foods!\u00a0 It\u2019s okay, you can say it. We all know everything tastes good fried!\u00a0 And what\u2019s better than a perfect batter: light and dry, soft on the inside, crunchy on the outside? We\u2019ve just described \u201cbeer batter\u201d, thanks to which you\u2019ll be frying like there\u2019s no tomorrow.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It\u2019s so easy to prepare. Just five minutes and your scampi will never be the same again! Mix together roughly the same amount of flour and beer (<\/span><i><span style=\"font-weight: 400;\">the trick is that the beer needs to be ice cold!<\/span><\/i><span style=\"font-weight: 400;\">). The bubbles will create texture in the batter, expanding when cooked. BREAD<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Admit it&#8230; after having experienced the quarantine of the past few years, during which you baked industrial quantities of pizza and <\/span><i><span style=\"font-weight: 400;\">croissants<\/span><\/i><span style=\"font-weight: 400;\">, you\u2019ve become a black belt in baking, and the art of bread making has no more secrets left for you.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Now are you ready to move on to the next level? Simply replace the water in your favorite recipe with beer, and&#8230; <\/span><i><span style=\"font-weight: 400;\">les jeux sont faits! <\/span><\/i><span style=\"font-weight: 400;\">You\u2019ll have a loaf of bread with an unmistakable, flavor, fragrance, and aroma!
