nostrane bollicine (<\/span><i><span style=\"font-weight: 400;\">rigorosamente Prosecco, Alta Langa, Franciacorta o TrentoDOC<\/span><\/i><span style=\"font-weight: 400;\">), <\/span><b>c&#8217;\u00e8 spazio anche per i <\/b><b><i>Beer-Lover<\/i><\/b><b> pi\u00f9 sfegatati<\/b><span style=\"font-weight: 400;\">. <\/span><span style=\"font-weight: 400;\">No, non sto parlando delle <\/span><a href=\"https:\/\/www.vinhood.com\/en\/magazine-en\/birre-di-natale-come-riconoscerle-e-perche-non-sono-affatto-una-commercialata\/\" target=\"_blank\" rel=\"noopener\"><b>Birre di Natale<\/b><\/a><span style=\"font-weight: 400;\">, negli ultimi anni ampiamente sdoganate.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">E nemmeno delle ricercate <\/span><a href=\"https:\/\/www.vinhood.com\/en\/magazine-en\/malheur-la-birra-che-ha-sfidato-lo-champagne\/\" target=\"_blank\" rel=\"noopener\"><i><span style=\"font-weight: 400;\">Bi\u00e8re Brut<\/span><\/i><\/a><span style=\"font-weight: 400;\"> (<\/span><i><span style=\"font-weight: 400;\">roba di nicchia<\/span><\/i><span style=\"font-weight: 400;\">), cio\u00e8 di un <\/span><b>mosto di cereali a cui viene applicato, pedissequamente, il Metodo Classico<\/b><span style=\"font-weight: 400;\">, dal <\/span><i><span style=\"font-weight: 400;\">b\u00e2tonnage<\/span><\/i><span style=\"font-weight: 400;\">, al <\/span><i><span style=\"font-weight: 400;\">remuage<\/span><\/i><span style=\"font-weight: 400;\">. <\/span><span style=\"font-weight: 400;\">Quest&#8217;anno ti propongo di osare per le Feste, per le tue Bollicine, con una Birra davvero fuori dal coro, capace di ammaliare anche i <\/span><i><span style=\"font-weight: 400;\">Wine-Addict<\/span><\/i><span style=\"font-weight: 400;\"> pi\u00f9 esigenti. <\/span><b>Tutta colpa di Napoleone<\/b><span style=\"font-weight: 400;\">!<\/span><\/p>\n<h2><b>POLITICA, SCIABOLE ED ALCOL<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Ad Epernay, Dipartimento della Marna, Francia, si \u00e8 soliti dire: \u201c<\/span><i><span style=\"font-weight: 400;\">Ce n&#8217;est pas du Champagne, si ce n&#8217;est pas du Champagne<\/span><\/i><span style=\"font-weight: 400;\">\u201d (<\/span><i><span style=\"font-weight: 400;\">Non \u00e8 Champagne, se non \u00e8 fatto nella Champagne<\/span><\/i><span style=\"font-weight: 400;\">). <\/span><span style=\"font-weight: 400;\">Ma facciamo un salto indietro, e cominciamo dall&#8217;inizio&#8230;\u00a0 la <\/span><b>Francia<\/b><span style=\"font-weight: 400;\">, prima rivoluzionaria e poi napoleonica, fra il 1794 ed il 1814, <\/span><b>conquista ed annette il piccolo e vicino Belgio<\/b><span style=\"font-weight: 400;\">, fino alla caduta 400;\">, dalle profonde radici storiche, e dal patrimonio sconfinato, nonostante la breve distanza dalla Champagne (<\/span><i><span style=\"font-weight: 400;\">120 km<\/span><\/i><span style=\"font-weight: 400;\">), non conosceva ancora le <\/span><i><span style=\"font-weight: 400;\">bulles<\/span><\/i><span style=\"font-weight: 400;\"> francofone. <\/span><span style=\"font-weight: 400;\">\u00c9 amore a prima vista, ed <\/span><b>i <\/b><b><i>Ma\u00eetre Brasseur<\/i><\/b><b> locali cercano di ingegnarsi su come riprodurre qualcosa di cos\u00ec spettacolare<\/b><span Bruxelles, Pajottenland e Valle della Senne, tradizionalmente vengono prodotti i <\/span><b>Lambic, uno Stile brassicolo, arcaico, a fermentazione spontanea<\/b><span style=\"font-weight: 400;\">, definito, da Frank Boon, dell&#8217;omonimo ed iconico birrificio, \u201c<\/span><i><span style=\"font-weight: 400;\">l&#8217;anello mancante fra Birra e Vino<\/span><\/i><span style=\"font-weight: 400;\">\u201d. <\/span><span style=\"font-weight: 400;\">Una Birra di frumento, acida, grazie al lavoro del fantomatico <\/span><i><span style=\"font-weight: 400;\">Brettanomyces Bruxellensis <\/span><\/i><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">Brett per gli amici<\/span><\/i><span style=\"font-weight: 400;\">), un <\/span><b>lievito selvaggio molto presente nella regione<\/b><span style=\"font-weight: 400;\">, per nulla amara (<\/span><i><span style=\"font-weight: 400;\">cum grano humulis<\/span><\/i><span style=\"font-weight: 400;\">) grazie all&#8217;utilizzo limitatissimo di luppolo, e per giunta stagionato (<\/span><i><span style=\"font-weight: 400;\">0-10 IBU<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<p><b>I Lambic possono essere aspri o&#8230; aspri<\/b><span style=\"font-weight: 400;\">.\u00a0 Inoltre possiedono, essendo Birre dal Carattere #Ribelle (<\/span><i><span style=\"font-weight: 400;\">e se ancora non sai di cosa parlo, temo tu sia rimasto l&#8217;unico; corri a rimediare con il <\/span><\/i><a href=\"https:\/\/www.vinhood.com\/test\/fai-il-test\/\" target=\"_blank\" rel=\"noopener\"><i><span style=\"font-weight: 400;\">Test del Gusto<\/span><\/i><\/a><span style=\"font-weight: 400;\">), un importante comparto olfattivo fatto anche di <\/span><b>pollaio, caprino, cantina o sella di cavallo<\/b><span style=\"font-weight: 400;\">. <\/span><span style=\"font-weight: 400;\">Un vecchio proverbio belga dice \u201c<\/span><i><span style=\"font-weight: 400;\">Un vrai Lambic doit puer<\/span><\/i><span style=\"font-weight: 400;\">\u201d (<\/span><i><span style=\"font-weight: 400;\">un vero Lambic deve puzzare<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<h2><b>ALLA CONQUISTA DELLE BOLLE<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Leggenda narra che un Birraio di Bruxelles, con sede in <\/span><i><span style=\"font-weight: 400;\">Geuzenstraat (via del Geuzen)<\/span><\/i><span style=\"font-weight: 400;\">, avendo finito lo spazio nelle sue botti, comincia a fare incetta delle <\/span><b>bottiglie sciampagnotte che gli Ufficiali napoleonici<\/b><span style=\"font-weight: 400;\">, una volta vuote, abbandonavano, per riempirle della sua Birra.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Con immenso stupore, dopo alcuni mesi di affinamento, aprendo la prima bottiglia, scopre che il Lambic <\/span><b>aveva sviluppato una schiuma da <\/b><b><i>Brut<\/i><\/b><b>, spessa e compatta, una carbonazione ben marcata<\/b><span style=\"font-weight: 400;\">, un colore dorato, pi\u00f9 chiaro e limpido del normale, ed un corpo leggero e dal vivace <\/span><i><span style=\"font-weight: 400;\">perlage<\/span><\/i><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Come ti ho gi\u00e0 detto, <\/span><b>tutta colpa di Napoleone e dello <\/b><b><i>Champagne<\/i><\/b><span style=\"font-weight: 400;\">! <\/span><span style=\"font-weight: 400;\">Questo vino, fino al 1848, anno della creazione del primo Perrier-Jouet <\/span><i><span style=\"font-weight: 400;\">dry <\/span><\/i><span style=\"font-weight: 400;\">voluto dagli Inglesi, <\/span><b>era dolce e non lo spumante che tutti oggi conosciamo<\/b><span style=\"font-weight: 400;\">. <\/span><span style=\"font-weight: 400;\">Il nostro amico \u201c<\/span><i><span style=\"font-weight: 400;\">Brett\u201d<\/span><\/i><span style=\"font-weight: 400;\">, trovando altro materiale zuccherino fermentescibile nei resti sul fondo delle sciampagnotte, aveva avviato una nuova <\/span><b>rifermentazione in bottiglia<\/b><span style=\"font-weight: 400;\">.\u00a0 <\/span><i><span style=\"font-weight: 400;\">Les\u00a0 jeux sont faits!<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">Ci vogliono comunque decenni, fino al 1897, per affinare e padroneggiare la tecnica per poter creare i prodotti che oggi ti consiglio. <\/span><span style=\"font-weight: 400;\">In quell&#8217;anno, la Geuze <\/span><b>viene ufficialmente presentata all&#8217;Esposizione Universale di Bruxelles<\/b><span style=\"font-weight: 400;\">, dove, anche grazie alla tipica bottiglia, presa in prestito dai cugini delle Ardenne, e presentata nella classica (<\/span><i><span style=\"font-weight: 400;\">per l&#8217;epoca<\/span><\/i><span style=\"font-weight: 400;\">) coppa, oggi <\/span><i><span style=\"font-weight: 400;\">Fl\u00fbte<\/span><\/i><span style=\"font-weight: 400;\">, conquista <\/span><b>il titolo di \u201c<\/b><b><i>Brussells Champagne<\/i><\/b><b>\u201d<\/b><span style=\"font-weight: 400;\"> (<\/span><i><span style=\"font-weight: 400;\">royalties e diritti d&#8217;autore, non pervenuti<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<h2><b>LA GEUZE, QUESTA SCONOSCIUTA<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">La Geuze, grazie alla sua acidit\u00e0, frizzantezza e totale assenza d&#8217;amaro, \u00e8 la <\/span><b>Birra perfetta anche per i pi\u00f9 intransigenti vitivinicoli<\/b><span style=\"font-weight: 400;\">. <\/span><span style=\"font-weight: 400;\">Viene prodotta con un <\/span><i><span style=\"font-weight: 400;\">blend<\/span><\/i><span style=\"font-weight: 400;\">, qui chiamato <\/span><i><span style=\"font-weight: 400;\">steken<\/span><\/i><span style=\"font-weight: 400;\">, di due o pi\u00f9 Lambic di et\u00e0 diversa.<\/span><\/p>\n<p><b>Ogni produttore ha la propria ricetta<\/b><span style=\"font-weight: 400;\">, anche se esistono dei Tagli tipici come:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2\/4 Lambic di 1 anno, 1\/4 di 2 anni e 1\/4 di 3 anni<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2\/3 di Lambic di 1 anno, 1\/3 di lambic di 2\/3 anni<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">9\/10 di Lambic di 2 anni, 1\/10 di Lambic di poche settimane<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Una volta assemblata in botte di rovere, la <\/span><i><span style=\"font-weight: 400;\">Cuve\u00e9<\/span><\/i><span style=\"font-weight: 400;\"> deve essere imbottigliata, in bottiglia o mezza-bottiglia sciampagnotte (<\/span><i><span style=\"font-weight: 400;\">le stesse degli Spumanti<\/span><\/i><span style=\"font-weight: 400;\">), chiusa con un tappo in sughero, avvolto da una gabbietta metallica per poter reggere i 3\/6 bar creati dalla pressione dell&#8217;anidride carbonica. <\/span><span style=\"font-weight: 400;\">La miscela, cos\u00ec ottenuta, subisce una <\/span><b>seconda fermentazione, grazie agli zuccheri presenti nel Lambic pi\u00f9 giovane<\/b><span style=\"font-weight: 400;\">, che fa da <\/span><i><span style=\"font-weight: 400;\">liqueur de tirage<\/span><\/i><span style=\"font-weight: 400;\">, creando la tipica carbonazione e riducendo il contenuto di zucchero allo 0,2%, rendendola piacevolmente secca.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Le bottiglie riposano indisturbate, con un processo <\/span><b>molto simile al <\/b><a href=\"https:\/\/www.vinhood.com\/en\/magazine-en\/milla-bolle\/\" target=\"_blank\" rel=\"noopener\"><b>Metodo Classico<\/b><\/a><span style=\"font-weight: 400;\"> (<\/span><i><span style=\"font-weight: 400;\">ad esclusione del\u00a0 d\u00e9gorgement e dosage, assenti<\/span><\/i><span style=\"font-weight: 400;\">), per almeno 4-6 mesi di affinamento in buie cantine, in posizione orizzontale, a differenza degli altri affinamenti o fermentazioni brassicole, dove le bottiglie sono rigorosamente in verticale. <\/span><b>Ogni annata, come nel vino, \u00e8 unica \u00e8 diversa<\/b><span style=\"font-weight: 400;\">, ed ogni botte creer\u00e0 Lambic e Geuze differenti. <\/span><span style=\"font-weight: 400;\">Una volta pronta, deve essere maneggiata e servita con cura, proprio per non sospendere i lieviti che, nel tempo, si sono depositati, <\/span><b>non essendoci una sboccatura per eliminarli<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In tempi moderni alcuni produttori aggiungono alla loro Geuze <\/span><b>una piccola quantit\u00e0 di zucchero o sciroppi<\/b><span style=\"font-weight: 400;\"> (<\/span><i><span style=\"font-weight: 400;\">una sorta di liqueur d\u2019exp\u00e9dition<\/span><\/i><span style=\"font-weight: 400;\">) per mitigare l&#8217;acidit\u00e0 ed essere adatta ad un pubblico pi\u00f9 ampio. <\/span><span style=\"font-weight: 400;\">Le Geuze senza dolcezza aggiunte (<\/span><i><span style=\"font-weight: 400;\">potremmo definirle le pas dose del frumento<\/span><\/i><span style=\"font-weight: 400;\">) vengono chiamate <\/span><i><span style=\"font-weight: 400;\">Oud <\/span><\/i><span style=\"font-weight: 400;\">Geuze (<\/span><i><span style=\"font-weight: 400;\">vecchie Geuze<\/span><\/i><span style=\"font-weight: 400;\">) o Geuze <\/span><i><span style=\"font-weight: 400;\">a l&#8217;Ancienne<\/span><\/i><span style=\"font-weight: miele o rabarbaro<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In bocca dominano i lieviti, con note di menta e salvia, in un <\/span><b>perfetto equilibrio gustativo<\/b><span style=\"font-weight: 400;\">, giocato fra acido e dolce, e dal finale secco e leggermente amarognolo. <\/span><span style=\"font-weight: 400;\">Insomma, una <\/span><b>Birra elegante, complessa, morbida e vellutata<\/b><span style=\"font-weight: 400;\">, dal <\/span><i><span style=\"font-weight: 400;\">bouquet<\/span><\/i><span style=\"font-weight: finezza, eleganza ed armonia, ed aggiungendo <\/span><b>note di zafferano, <\/b><b><i>sherry<\/i><\/b><b> e mandorle<\/b><span style=\"font-weight: 400;\">.\u00a0<\/span><\/p>\n<h2><b>PAIRING PER LE FESTE<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Un prodotto dissetante, <\/span><b>perfetto come aperitivo<\/b><span style=\"font-weight: 400;\">, grazie alla sua acidit\u00e0 e frizzantezza che sapranno stimolare l&#8217;appetito. <\/span><span style=\"font-weight: 400;\">Risulta comunque una <\/span><b>bollicina molto versatile a tavola<\/b><span style=\"font-weight: 400;\">, superba
