The beer must be <\/span><b>produced in or in the vicinity of a Trappist Abbey<\/b><span style=\"font-weight: 400;\">, it must be <\/span><b>brewed by the monks<\/b><span style=\"font-weight: 400;\">, or regardless under their supervision, and the profits must be used for supporting the monastery and its community, or they must be <\/span><b>donated to charity<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">No ifs ands or buts!<\/span><\/p>\n<h2><b>THE BIRTH OF AN ORDER&#8230;AND OF TWO STYLES!<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Founded, complete with papal address, in 1677, at the Abbey of <\/span><i><span style=\"font-weight: 400;\">Notre-Dame de la Trappe<\/span><\/i><span style=\"font-weight: 400;\"> in Soligny-la-Trappe, Lower Normandy, France (from which they borrowed the name), despite popular opinion, the Trappists began brewing beer much later.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Contrary to other religious orders, for almost their entire existence they <\/span><b>abhorred the consumption <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">never mind the production!<\/span><\/i><span style=\"font-weight: 400;\">) <\/span><b>of this pale <\/b><span style=\"font-weight: 400;\">(and <\/span><i><span style=\"font-weight: 400;\">sinful<\/span><\/i><span style=\"font-weight: 400;\">) <\/span><b>beverage<\/b><span style=\"font-weight: 400;\">, until the fateful year of 1836 when, out of necessity, they brewed their first beer in one of their convents in the province of Antwerp, Flanders.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">That marked the point of no return, with the binomials \u201cTrappist-beer\u201d and \u201cTrappist-Belgian Ale\u201d being solidly sculpted into the collective conscious.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Within these walls, styles that represent the backbone of Belgian brewing were created and developed, like <\/span><b>Enkel<\/b><span style=\"font-weight: 400;\">, (<\/span><i><span style=\"font-weight: 400;\">but above all<\/span><\/i><span style=\"font-weight: 400;\">) <\/span><b>Dubbel and Tripel, the styles traditionally produced by the monks<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><img decoding=\"async\" 800w\" data-sizes=\"auto\" data-orig-sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<h2><b>CERTIFIED BEERS<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">The success, first in Belgium and then worldwide, was such that it pushed other producers to climb aboard the winner\u2019s cart, producing beer branded with the popular (and <\/span><i><span style=\"font-weight: 400;\">commercially hyped<\/span><\/i><span style=\"font-weight: 400;\">) epithet of \u201c<\/span><i><span style=\"font-weight: 400;\">Trappist<\/span><\/i><span style=\"font-weight: 400;\">\u201d.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The issue came to the attention of the court of Ghent, Flanders, which, in February 1962 established the <\/span><b>Reformed Cistercian Monks\u2019 exclusive right to use and take advantage of the term \u201c<\/b><b><i>Trappist Beer<\/i><\/b><b>\u201d<\/b><span style=\"font-weight: 400;\">, granting them legal protection.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The flaming 70s and 80s took the world of beer by storm, with Michael Jackson and the <\/span><i><span style=\"font-weight: 400;\">American Renaissance<\/span><\/i><span style=\"font-weight: 400;\">, directing the global attention of connoisseurs to these beers once again, and unleashing a new (<\/span><i><span style=\"font-weight: 400;\">q.e.d.)<\/span><\/i><span style=\"font-weight: 400;\"> wave of <\/span><i><span style=\"font-weight: 400;\">fakes<\/span><\/i><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Until, in 1997, eight Trappist Abbeys (<\/span><i><span style=\"font-weight: 400;\">6 in Belgium, 1 in Holland, and 1 in Germany<\/span><\/i><span style=\"font-weight: 400;\">) established the <\/span><b><i>International Trappist Association (the association which unites all beer-producing Trappist monasteries)<\/i><\/b><span style=\"font-weight: 400;\">, creating the famous, brown and white, hexagonal \u201c<\/span><i><span style=\"font-weight: 400;\">Authentic Trappist Product<\/span><\/i><span style=\"font-weight: 400;\">\u201d logo, which we\u2019ve all seen printed on our beloved bottles, thus certifying their provenance.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Today there are twenty abbeys in the association, of which only thirteen produce beer.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">To celebrate 25 years since its foundation, here are <\/span><b>5 <\/b><b><i>essential <\/i><\/b><b>Trappist experiences <\/b><span style=\"font-weight: 400;\">that all true beer connoisseurs must <\/span><b>add to their <\/b><b><i>to-do<\/i><\/b><b> list<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><b>1. DRINK A PAIR OF WESTMALLES<\/b><\/p>\n<p><span style=\"font-weight: 400;\">The <\/span><a href=\"https:\/\/www.trappistwestmalle.be\/it\/birreria\" target=\"_blank\" rel=\"noopener\"><b>Abbey of Notre-Dame du Sacr\u00e9-C\u0153ur de Westmalle<\/b><\/a><b>,<\/b><span style=\"font-weight: 400;\"> province of Antwerp, Flanders, is one of the Trappist brewers. Originally founded in 1794, during construction to enlarge it in 1836 a brewery was added, which began selling to laymen in 1861. It was within these walls that a miracle, actually two miracles, took place. <\/span><b>Two of the most well-known and representative Belgian brewing styles were invented by the monks of Westmalle themselves<\/b><span style=\"font-weight: 400;\">, and these two prototypes established the standards for the styles of today.<\/span><\/p>\n<p><b>In 1926 Dubbel was created<\/b><span style=\"font-weight: 400;\">, and the (<\/span><i><span style=\"font-weight: 400;\">then<\/span><\/i><span style=\"font-weight: 400;\">) \u201c<\/span><i><span style=\"font-weight: 400;\">Superbier<\/span><\/i><span style=\"font-weight: 400;\">\u201d was born only five years later, <\/span><b>taking the name Tripel in 1934<\/b><span style=\"font-weight: 400;\">. THE LEGENDARY ORVAL VERT AND VIEIL OR<\/b><\/p>\n<p><span style=\"font-weight: 400;\">We all know the<\/span><a href=\"https:\/\/www.orval.be\/fr\/page\/447-brasserie\" target=\"_blank\" rel=\"noopener\"> <b>Orval Brewery<\/b><\/a><span style=\"font-weight: 400;\">, of the homonymous abbey, and its (<\/span><i><span style=\"font-weight: 400;\">only<\/span><\/i><span style=\"font-weight: 400;\">) beer, in the iconic bowling-pin shaped bottle designed by renowned architect Henry Vaes in 1931.<\/span><\/p>\n<p><b>Not everyone knows that the Orvals, in actuality <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">drum roll please<\/span><\/i><span style=\"font-weight: 400;\">), <\/span><b>are not one, not two, but actually three beers!<\/b><\/p>\n<p><span style=\"font-weight: 400;\">So book your flight for <\/span><i><span style=\"font-weight: 400;\">Charleroi<\/span><\/i><span style=\"font-weight: 400;\"> and, once in Gaume, Vallonia, head to<\/span><a href=\"https:\/\/www.alangegardien.be\/\" target=\"_blank\" rel=\"noopener\"> <i><span style=\"font-weight: 400;\">l\u2019Ange Gardien<\/span><\/i><\/a><span style=\"font-weight: 400;\"> (<\/span><i><span style=\"font-weight: 400;\">Guardian Angel<\/span><\/i><span style=\"font-weight: 400;\">), the restaurant with a view of the abbey, where you can <\/span><b>taste typical products, including the monks Trappist cheeses, and accompany them with two beers that you can drink only here<\/b><span style=\"font-weight: 400;\">: <\/span><b>Orval Vert<\/b><span style=\"font-weight: 400;\">, an Enkel with 3.5% ABV that perfectly embodies the pilgrim\u2019s idea of monastic beer (<\/span><i><span style=\"font-weight: 400;\">also available in the abbey\u2019s shop<\/span><\/i><span style=\"font-weight: 400;\">), and <\/span><b>Vieil Or<\/b><span style=\"font-weight: 400;\">, the classic Orval, but with a long aging process of at least 3 months in the bottle.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This is truly the <\/span><i><span style=\"font-weight: 400;\">golden valley<\/span><\/i><span style=\"font-weight: 400;\">, as Matilde di Canossa supposedly called it (<\/span><i><span style=\"font-weight: 400;\">ipse dixit<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<p><b>3. BUY A CASE OF WESTVLETEREN, OR TWO<\/b><\/p>\n<p><span style=\"font-weight: 400;\">The monks of<\/span><a href=\"https:\/\/sintsixtus.be\/trial\/breadwinning-brewery\/\" target=\"_blank\" rel=\"noopener\"> <b>Sint Sixtus<\/b><\/a><span style=\"font-weight: 400;\">, more widely known in the brewing world by the pseudonym Westvleteren, are <\/span><b>obstinate and inflexible when it comes to the Trappist movement<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Not by their own volition, they transformed into true <\/span><i><span style=\"font-weight: 400;\">rock stars<\/span><\/i><span style=\"font-weight: 400;\">, when, in 2001, the well-known American website Ratebeer.com (<\/span><i><span style=\"font-weight: 400;\">as well as BeerAdvocate soon after in 2007<\/span><\/i><span style=\"font-weight: 400;\">) declared their XII (<\/span><i><span style=\"font-weight: 400;\">a Quadrupel<\/span><\/i><span style=\"font-weight: 400;\">) the <\/span><b>best beer in the world<\/b><span style=\"font-weight: 400;\">, turning their bottled creation into the <\/span><i><span style=\"font-weight: 400;\">White Album<\/span><\/i><span style=\"font-weight: 400;\"> of beers.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">However, these upstanding heroes haven\u2019t allowed this go to their heads, and their motto remains <\/span><i><span style=\"font-weight: 400;\">\u201c<\/span><\/i><b><i>we make beer to live, we don\u2019t live to make beer<\/i><\/b><i><span style=\"font-weight: 400;\">\u201d.<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">Despite the extreme global demand (<\/span><i><span style=\"font-weight: 400;\">in Dubai a bottle of Westvleteren costs the incredible sum of \u20ac260<\/span><\/i><span style=\"font-weight: 400;\">), our William Wallaces of beer produce for only 75 days out of the year, for a paltry total of 5,000 hl, unchanged since 1946 (<\/span><b><i>just what they need to support their abbey, not a single cent more<\/i><\/b><span style=\"font-weight: 400;\">), selling directly to private citizens only. They don\u2019t collaborate with retailers, importers, or large-scale distribution, and were the last of the Trappists to hire outside personnel (<\/span><i><span style=\"font-weight: 400;\">only 3 employees in addition to 26 working monks<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Are you curious and do you want to purchase a Westvleteren?<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Arm yourself with time and patience&#8230; quite fitting as we\u2019re talking about monks. And above all <\/span><b>forget about simply going to buy it.<\/b><\/p>\n<p><span style=\"font-weight: 400;\">You first have to<\/span><a href=\"https:\/\/www.trappistwestvleteren.be\/en\/beer-sales\" target=\"_blank\" rel=\"noopener\"> <b>register on the abbey\u2019s website<\/b><\/a><span style=\"font-weight: 400;\"> with all of your personal information (<\/span><i><span style=\"font-weight: 400;\">including the license plate of your car<\/span><\/i><span style=\"font-weight: 400;\">), then <\/span><b>reserve your pick-up <\/b><span style=\"font-weight: 400;\">at one of the brewery\u2019s available windows, on average after at least 60 days (<\/span><i><span style=\"font-weight: 400;\">they receive 85,000 requests per hour<\/span><\/i><span style=\"font-weight: 400;\">). When your time has come, you can go to Sint Sixtus <\/span><b>on the set day and at the set time <\/b><span style=\"font-weight: 400;\">and finally purchase <\/span><b>a maximum of 2 cases of beer <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">for a total of 48 33-cl bottles<\/span><\/i><span style=\"font-weight: 400;\">) to be drunk <\/span><i><span style=\"font-weight: 400;\">with a grain of salt<\/span><\/i><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Before leaving you must <\/span><b>promise not to give your private supply <\/b><span style=\"font-weight: 400;\">to third parties and <\/span><b>not to return before two months <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">remember, they have your license plate and personal information<\/span><\/i><span style=\"font-weight: 400;\">). If all of this is too much for you, stop by<\/span><a href=\"http:\/\/www.indevrede.be\/home.php?lang=en\" target=\"_blank\" rel=\"noopener\"> <b><i>In De Vrede<\/i><\/b><\/a><span style=\"font-weight: 400;\"> (<\/span><i><span style=\"font-weight: 400;\">in <\/span><\/i><span style=\"font-weight: 400;\">peace), the Westvleteren\u2019s pub; you won\u2019t be able to buy a case, but they\u2019ll happily serve you an excellent beer.<\/span><\/p>\n<p><b>4. FORGETTING A GRANDE RESERVE IN YOUR CELLAR<\/b><\/p>\n<p><span style=\"font-weight: 400;\">The<\/span><a href=\"https:\/\/www.scourmont.be\/\" target=\"_blank\" rel=\"noopener\"><b>Abbey of Notre-Dame de Scourmont<\/b><\/a><span style=\"font-weight: 400;\">, in Forges, Vallonia, known to most as Chimay (<\/span><i><span style=\"font-weight: 400;\">the brand of its beers<\/span><\/i><span style=\"font-weight: 400;\">), produces one of the <\/span><b>rare aged beers<\/b><span style=\"font-weight: 400;\">. The name of this rarity is <\/span><b>Chimay Grande R\u00e9serve<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It\u2019s a <\/span><b>vintage beer that\u2019s different every year and produced in small quantities<\/b><span style=\"font-weight: 400;\">. The base is the well-known Chimay Blue, a recipe that\u2019s able to amaze drinkers with its rich and aromatic combination of fruit, chocolate, coffee, and spices. In fact, these beers undergo a second fermentation process in barrels (<\/span><i><span style=\"font-weight: 400;\">former rum, bourbon, cognac, or armagnac casks<\/span><\/i><span style=\"font-weight: 400;\">), and finally a third fermentation process in champagne-style bottles.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">What\u2019s the result? A surprising richness and complexity.
