Refrigeration&#8230; not so much.<\/span><\/p>\n<h2><b>WARM IS BEAUTIFUL<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">It wasn\u2019t until 1748 that people (<\/span><i><span style=\"font-weight: 400;\">aside from Elsa in Frozen<\/span><\/i><span style=\"font-weight: 400;\">) managed to harness the cold. And even the first pre-refrigerator iceboxes weren\u2019t invented until the 17th century.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">As strange as it may sound, <\/span><b>for thousands of years people apparently drank every fermented beverage warm<\/b><span style=\"font-weight: 400;\">, whether it was wine, beer, cider, etc..<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Beer developed primarily in cooler to freezing climates, spreading throughout Northern and Eastern Europe, where grape vines would never have survived.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">These are difficult stretches of land, with a harsh climate, lashing winds, and temperatures that can drop to -30\u00b0C.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In this context, what could be better than huddling together around a fire with a cup of hot beer to help warm us?<\/span><\/p>\n<p><b>And by hot I mean&#8230; really hot, like a mulled wine: 50\u00b0C-70\u00b0C <\/b><span style=\"font-weight: 400;\">of festively inebriating, sugary and alcoholic, goodness!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Ladies and gentlemen, it\u2019s my pleasure to introduce Mulled Beer (as it\u2019s known): the perfect beverage for your festivities this year!<\/span><\/p>\n<p><img decoding=\"async\" class=\"lazyload aligncenter size-full wp-image-12607\" src=\"https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2.jpg\" data-orig-src=\"https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2.jpg\" alt=\"birre calde\" width=\"800\" height=\"400\" srcset=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27800%27%20height%3D%27400%27%20viewBox%3D%270%200%20800%20400%27%3E%3Crect%20width%3D%27800%27%20height%3D%27400%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-srcset=\"https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2-200x100.jpg 200w, https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2-300x150.jpg 300w, https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2-400x200.jpg 400w, https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2-500x250.jpg 500w, https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2-600x300.jpg 600w, https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2-700x350.jpg 700w, https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2-768x384.jpg 768w, https:\/\/www.vinhood.com\/wp-content\/uploads\/2021\/12\/inner_mulled_beer_2.jpg 800w\" data-sizes=\"auto\" data-orig-sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<h2><b>YULE\u00d8L, THE CELTIC SOLSTICE BEER<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Born in the distant past, this beer spread throughout Europe\u2019s Celtic populations and <\/span><b>was the beverage drunk to celebrate the Yule, or winter solstice, one of the eight sabbats of the pagan tradition<\/b><span style=\"font-weight: 400;\">, the festivities of which lasted from December 21 to January 1.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In other words, <\/span><b>Christmas before Christmas <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">to this day, in Scandinavian languages, the world \u201cChristmas\u201d is translated with \u201cJul\u201d<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The darkest and scariest nights of the year (<\/span><i><span style=\"font-weight: 400;\">forget about Halloween<\/span><\/i><span style=\"font-weight: 400;\">), when the cold reaches its peak and one spends the many dark hours in vigil, hoping that the sun and its life-saving rays will return soon.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This tradition, like many others (<\/span><i><span style=\"font-weight: 400;\">the tree, mistletoe, holly<\/span><\/i><span style=\"font-weight: 400;\">), survived Christianization, creating today\u2019s Christmas.<\/span><\/p>\n<h2><b>GOD SAVE THE HOT BEER<\/b><\/h2>\n<p><b>While the capital of Christmas Beers is undeniably Belgium, that of mulled beer is just as certainly the United Kingdom<\/b><span style=\"font-weight: 400;\">, though they can also be found from the Czech Republic, with its <\/span><i><span style=\"font-weight: 400;\">Teple Pivo <\/span><\/i><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">literally \u201cHot Beer\u201d, how imaginative&#8230;<\/span><\/i><span style=\"font-weight: 400;\">) to Scandinavia with its <\/span><i><span style=\"font-weight: 400;\">Braggot<\/span><\/i><span style=\"font-weight: 400;\">, the forerunner to honey beer.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In the US, for example, where it\u2019s more widely known as <\/span><i><span style=\"font-weight: 400;\">Hot Ale Flip<\/span><\/i><span style=\"font-weight: 400;\">, or simply <\/span><i><span style=\"font-weight: 400;\">Flip<\/span><\/i><span style=\"font-weight: 400;\">, it arrived with the first settlers as a <\/span><i><span style=\"font-weight: 400;\">sailor\u2019s drink<\/span><\/i><span style=\"font-weight: 400;\">, before spreading from New England to all of the port taverns along the Atlantic coast (<\/span><i><span style=\"font-weight: 400;\">George Washington was a great connoisseur&#8230; and, above all, a great drinker<\/span><\/i><span style=\"font-weight: 400;\">), adding cream, milk, eggs, and bread to the recipe (<\/span><i><span style=\"font-weight: 400;\">the breakfast of champions!<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<p><b>These hot beers were enormously popular from the 16th to the 19th centuries<\/b><span style=\"font-weight: 400;\">, filling cups from the most noble sitting rooms all the way to the seediest dockside pubs, not just during the holidays, but throughout the entire fall-winter season.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The British have a fantastic term for it: <\/span><i><span style=\"font-weight: 400;\">Winter Warmer<\/span><\/i><span style=\"font-weight: 400;\">, emphasizing both its prosaic and spiritual worth.<\/span><\/p>\n<p><b>An infinite variety exists, able to satisfy every taste, from the <\/b><b><i>Lambswool<\/i><\/b><b>, scented with apple, nutmeg, and ginger, to the <\/b><b><i>Posset<\/i><\/b><b>, with milk and cinnamon.<\/b><\/p>\n<p><span style=\"font-weight: 400;\">They\u2019re so popular and commonly drunk that they\u2019re mentioned, recipes included, in novels like <\/span><i><span style=\"font-weight: 400;\">\u201cTwelfth Night\u201d<\/span><\/i><span style=\"font-weight: 400;\"> by Robert Herrick and <\/span><i><span style=\"font-weight: 400;\">\u201cThe Pickwick Papers\u201d <\/span><\/i><span style=\"font-weight: 400;\">by Charles Dickens.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In addition to the customary beer base, every recipe includes the <\/span><b>abundant use of Christmas spices <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">cinnamon, nutmeg, juniper, cloves&#8230; the same ones as in Ikea\u2019s cookies, just to be clear&#8230;<\/span><\/i><span style=\"font-weight: 400;\">) and <\/span><b>sugar <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">at one time replaced in the Old World by honey, and in the New World by molasses, maple syrup, or squash<\/span><\/i><span style=\"font-weight: 400;\">), with the addition of <\/span><b>fruit <\/b><span style=\"font-weight: 400;\">and an alcoholic \u201c<\/span><i><span style=\"font-weight: 400;\">warmer<\/span><\/i><span style=\"font-weight: 400;\">\u201d like <\/span><b>rum, port, sherry, or madeira <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">very popular among the English<\/span><\/i><span style=\"font-weight: 400;\">), to make the mulled beer even stronger.<\/span><\/p>\n<h2><b>CHRISTMAS AND BULLYING<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">The most iconic is definitely the <\/span><b>Wassail <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">from \u201cW\u00e6s H\u00e6l\u201d, Good Health in Old English<\/span><\/i><span style=\"font-weight: 400;\">), a <\/span><b>hot beer made with spices and toasted apple<\/b><span style=\"font-weight: 400;\">, which was brought from house to house and offered while blessing the inhabitants and singing Christmas carols (<\/span><i><span style=\"font-weight: 400;\">for the record&#8230; Christmas carolers are still called Yulesingers&#8230;<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Over time, the <\/span><i><span style=\"font-weight: 400;\">Wassailing <\/span><\/i><span style=\"font-weight: 400;\">custom transformed into <\/span><i><span style=\"font-weight: 400;\">Mumping <\/span><\/i><span style=\"font-weight: 400;\">or <\/span><i><span style=\"font-weight: 400;\">Doleing <\/span><\/i><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">from \u201cto mump\u201d or \u201cto beg\u201d, and \u201cto dole\u201d or \u201cto give alms\u201d<\/span><\/i><span style=\"font-weight: 400;\">), a night of the year, called a <\/span><i><span style=\"font-weight: 400;\">Gooding<\/span><\/i><span style=\"font-weight: 400;\">, in which the poor and homeless were permitted to go door to door <\/span><b>asking for charity<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">People would offer them food and gifts (<\/span><i><span style=\"font-weight: 400;\">Good Things<\/span><\/i><span style=\"font-weight: 400;\">), and the beggars would reciprocate with <\/span><b>branches of mistletoe or holly, Christmas carols, and the ever-present glass of mulled beer<\/b><span style=\"font-weight: 400;\">!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This practice was banned in the 20th century, not only to discourage begging, but also to quell the custom that the poor had of vandalizing the home (<\/span><i><span style=\"font-weight: 400;\">owners included<\/span><\/i><span style=\"font-weight: 400;\">) of those who did not give them what they asked for.<\/span><\/p>\n<p><i><span style=\"font-weight: 400;\">(Have you ever REALLY listened to the words of \u201cWe Wish You a Merry Christmas\u201d, which we, sentimental and unaware, have our innocent and angelic children sing? \u201c&#8230;Now bring us a figgy pudding&#8230; we won\u2019t go until we get some, so bring some out here!\u201d Bullying dressed up for Christmas.)<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">This has survived to the present day thanks to its adoption by <\/span><b>charitable organizations which, while singing Christmas Carols at entryways and exits, ask for donations for charitable causes <\/b><span style=\"font-weight: 400;\">(<\/span><i><span style=\"font-weight: 400;\">in the full 1950s-Golden-Age-of-Hollywood style of \u201cIt\u2019s a Wonderful Life\u201d and \u201cMiracle on 34th Street\u201d, also essentials at Christmas time. And if you haven\u2019t ever seen them, do!<\/span><\/i><span style=\"font-weight: 400;\">).<\/span><\/p>\n<h2><b>MULLED BEER: USER INSTRUCTIONS<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">What with interdictions and the advent of refrigeration, the tradition of mulled beer has moved to our holiday tables (<\/span><i><span style=\"font-weight: 400;\">and more recently to every Christmas market<\/span><\/i><span style=\"font-weight: 400;\">), becoming the <\/span><b>Christmas beverage par excellence, the \u201cgrandmother\u201d of all modern Christmas beers<\/b><span style=\"font-weight: 400;\">, spices included.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">So easy to make, and with results that are joyful to say the least.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The important thing is choosing the <\/span><b>right beer<\/b><span style=\"font-weight: 400;\">, which should generally be <\/span><b>strong, full-bodied, rich, complex, alcoholic <\/b><span style=\"font-weight: 400;\">(as you cook it, a fair amount of the alcohol will, whether you like it or not, become the angels\u2019 share), and especially sweet!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Hops addict that I am, this is the only time you\u2019ll hear me say it, so write it down.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Want a recommendation? Try it with one of the beers from <\/span><a href=\"http:\/\/www.duckbrewery.it\/\" target=\"_blank\" rel=\"noopener\"><b>Duck Brewery<\/b><\/a><span style=\"font-weight: 400;\">, an artisan brewery from the province of Mantua, like <\/span><b>Ottona<\/b><span style=\"font-weight: 400;\">, Tripel dense, full-bodied, and spicy, <\/span><b>Milky Murdock<\/b><span style=\"font-weight: 400;\">, a sweet and fruity stout, or <\/span><b>Doppelbock<\/b><span style=\"font-weight: 400;\">, toasty and caramelized; three different spirits for your Mulled Beer which will give it just the right flavor and aroma.<\/span><\/p>\n<p><b>Just heat the beer in a pot, let the sugar dissolve, add the spices which will flavor the Mulled Beer, and drop in the fruit<\/b><span style=\"font-weight: 400;\">, fresh or previously caramelized in the oven.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Cook for twenty to thirty minutes and <\/span><i><span style=\"font-weight: 400;\">voila!<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">And to make it even richer and more enveloping, when you\u2019re almost done cooking <\/span><b>you can add the distillate or liqueur wine that you prefer<\/b><span style=\"font-weight: 400;\">, from cognac to Marsala.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Want to know a little trick? <\/span><b>Don\u2019t ever let it boil, only simmer<\/b><span style=\"font-weight: 400;\">, remaining within a temperature of between 70\u00b0C and 90\u00b0C, so that you don\u2019t lose too much alcohol.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">All that\u2019s left to do is share this auspicious Wassailing custom with your fellow diners: perfect as an ending to festive and epic Christmas lunches and dinners <\/span><i><span style=\"font-weight: 400;\">\u00e0 la Highlander (there can be only one)<\/span><\/i><span style=\"font-weight: 400;\">, a unique pairing with classic holiday sweets, and a stylish, well).<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">At this point take a sip of your mulled beer and pass the bowl to your neighbor (exchanging a kiss, <\/span><i><span style=\"font-weight: 400;\">with or without mistletoe<\/span><\/i><span style=\"font-weight: 400;\">), who will repeat this divine ritual.<\/span><\/p>\n<p><i><span style=\"font-weight: 400;\">Wassail<\/span><\/i><span
